Piña Colada

50ml Coastal Reach Spiced Rum
35ml coconut water
25ml pineapple juice
3-4 chunks of pineapple
2 tsp caster sugar
Pineapple wedge (to garnish)

  1. Add pineapple chunks and sugar to a cocktail shaker and gently crush with a muddler (or back of a spoon)

  2. Pour in the rest of the ingredients with plenty of ice, and shake-shake-shake

  3. Strain over crushed ice into a tall glass and garnish
